Elevate your picnic with a bacon, egg, and tomato macaroni salad!
Ingredients:
  • 1 pound sliced bacon
  • 1 (16 ounce) package elbow macaroni
  • 1 cup mayonnaise
  • 0.5 cup sour cream
  • 2 tablespoons prepared yellow mustard
  • 0.25 cup white sugar
  • 0.25 cup cider vinegar
  • 3 tomatoes, seeded and chopped
  • 1 large cucumber, peeled and chopped
  • 4 hard-cooked eggs, chopped
  • 0.5 cup chopped celery
  • 0.5 cup sliced green olives
Instructions:
  • First, crisp up the bacon in a generously sized skillet until it turns a beautiful golden brown. Let it cool, then break it into flavorful crumbles. Next, boil some salted water in a big pot. Drop in the macaroni and cook until it's perfectly al dente, about 8-10 minutes. Drain and rinse the pasta with cold water.
  • Combine mayonnaise, sour cream, mustard, sugar, vinegar, salt, and pepper in a large bowl, whisking until sugar dissolves. Add bacon, pasta, tomato, cucumber, egg, and celery, gently folding until salad is evenly coated with dressing. Serve sprinkled with sliced olives.
