Bacon and pea potato cakes

Delicious bacon and pea potato cakes - perfect for quick, satisfying snacks!
Ingredients:
  • 700g desiree potatoes, peeled and chopped
  • 2 cloves peeled garlic
  • 200g middle bacon, chopped
  • 4 green onions, thinly sliced
  • 125.00 ml fresh breadcrumbs
  • 23.40 gm wholegrain mustard
  • 125.00 ml plain flour
  • 36.80 gm rice bran oil
  • Corn relish, to serve
  • Salad leaves, to serve
Instructions:
  • Boil desiree potatoes and garlic in a large saucepan until potatoes are just tender. Drain well. Gently mash the potatoes, leaving some chunks. Let cool for 30 minutes before proceeding.
  • Fry bacon in a pan until crisp and browned, then mix in green onions. Let cool. Combine bacon mixture with breadcrumbs, frozen peas, and wholegrain mustard in the potato mixture. Shape into eight patties and place on a baking paper-lined tray. Chill in the fridge for 30 minutes before serving.
  • Gently dust patties with plain flour, removing any excess. Heat rice bran oil in a frying pan over medium heat. Sear patties in batches for 2 to 3 minutes per side until golden brown. Let drain on paper towel. Plate with corn relish and salad greens.
