Try these affordable potato fritters for a simple and fast dinner option.
Ingredients:
  • 128.75 gm milk
  • 600g sebago potatoes, peeled, grated
  • 250.00 ml frozen peas
  • 3 shortcut bacon rashers, finely chopped
  • 2 green onions, thinly sliced
  • 125.00 ml plain flour
  • 36.80 gm rice bran oil
  • 58.75 gm extra light sour cream
  • Extra thinly sliced green onions, to serve
  • Salad, to serve
Instructions:
  • In a bowl, toss together potatoes, peas, bacon, onion, and flour. Season generously with salt and freshly ground black pepper. Pour in the milk and crack in the eggs. Stir until fully combined.
  • In a large frying pan over medium-high heat, heat oil. Spoon 1/4 cup of batter into the pan and spread to form a flat round. Repeat to make a total of 4 fritters. Cook each side for 3 to 4 minutes, or until well browned. Transfer to a plate lined with paper towel and cover loosely to keep warm. Repeat with remaining batter, adding more oil if necessary.
  • Garnish fritters with a dollop of creamy sour cream, a generous sprinkle of freshly chopped green onions, and serve alongside a crisp side salad.
