Bacon Cauliflower Sauté

Sautéed cauliflower cooked in flavorful broth and wine for a simple and versatile side dish.
Ingredients:
  • 1 tablespoon olive oil
  • 3 slices thick-cut bacon, diced
  • 1 large head cauliflower, cut into bite-size pieces
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 large clove garlic, minced
  • 0.5 cup white wine
  • 0.5 cup Swanson® Chicken Broth
  • 0.75 teaspoon chopped fresh thyme
Instructions:
  • Add diced bacon to a cold saute pan, then turn the heat to medium-high. Cook until the fat is rendered and the bacon is crispy, approximately 10 minutes. Remove the bacon from the pan and let it drain on paper towels.
  • In the same pan, heat olive oil over medium-high heat. Sauté cauliflower until golden brown, approximately 10 minutes. Season with salt and pepper, then add garlic and cook for about 30 seconds until fragrant.
  • Combine wine, Swanson® Chicken Broth, and thyme in the pot. Bring to a vigorous boil. Lower the heat to medium and simmer, stirring occasionally, until cauliflower softens and liquid reduces, approximately 12 minutes.
  • Incorporate the set-aside bacon and season to your liking. Enjoy while hot!
