Indulge in a savory cauliflower crumble baked with cheesy sauce, onions, almonds, and bacon - a decadent, low-carb delight!
Ingredients:
  • 1 tablespoon butter
  • 6 cups cooked cauliflower florets, drained
  • salt and ground black pepper to taste
  • 1 (4 ounce) package garlic and herb cheese spread (such as Boursin®)
  • 1 cup half-and-half
  • 0.33333334326744 cup grated Parmesan cheese
  • 1 cup French fried onions
  • 0.33333334326744 cup sliced almonds
  • 2 strips cooked bacon, crumbled
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and butter an 11x7-inch oven-proof casserole dish.
  • Transfer the steamed cauliflower florets to the greased casserole dish and generously season with salt and pepper.
  • In a small skillet over medium heat, melt butter. Stir in garlic until fragrant, for about 1 to 2 minutes. Add cheese cut into 1/2-inch cubes. Stir gently until cheese starts to melt, for about 2 to 3 minutes. Pour in half-and-half and whisk until smooth, for about 1 to 2 minutes.
  • Mix in the Parmesan cheese until it's fully incorporated and take the pot off the heat. Drizzle the cheesy mixture over the cauliflower florets and sprinkle with French fried onions, almonds, and crumbled bacon.
  • Bake until golden and bubbly, approximately 20 minutes in the pre-heated oven.
