Cauliflower mornay with blue cheese crumble

Elevate your cauliflower bake with a touch of bold blue cheese for added depth of flavor.
Ingredients:
  • 1 small cauliflower, cut into florets
  • 25g butter, chopped
  • 40.00 ml plain flour
  • 386.25 gm milk
  • 125.00 ml grated cheddar
  • 250.00 ml fresh breadcrumbs
  • 100g blue cheese, crumbled (see Notes)
  • 40.00 ml fresh chives, finely chopped, plus extra to serve
Instructions:
  • Preheat your oven to 180C/160C fan-forced and grease a 6cm-deep, 18cm x 27cm (6-cup capacity) ovenproof dish.
  • Boil cauliflower in a large saucepan until just tender, about 6 to 8 minutes. Drain and transfer to a prepared dish.
  • Melt butter in a saucepan over medium heat. Stir in flour until bubbling for 1 to 2 minutes. Slowly add milk, bring to a boil, then simmer on low for 3 to 5 minutes until thickened. Stir in cheddar until melted. Season with salt and pepper and pour over cauliflower.
  • In a bowl, mix breadcrumbs, cheese, and chives. Sprinkle the mixture over cauliflower. Bake for 15 to 20 minutes or until breadcrumbs are golden. Garnish with extra chives before serving.
