Cauliflower mornay

Cozy and nostalgic side dish that brings warmth and heartiness.
Ingredients:
  • 800g cauliflower
  • 50g butter
  • 62.50 ml plain flour
  • 515.00 gm milk
  • 187.50 ml grated cheddar cheese
  • 125.00 ml fresh breadcrumbs
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Boil cauliflower in water for 5 minutes until tender. Drain well.
  • In a saucepan over medium heat, melt butter. Add flour and cook, stirring, for 1 minute until bubbling. Gradually pour in milk, stirring until smooth. Bring to a boil, then lower the heat to medium and simmer for 5 minutes until sauce thickens. Remove from heat and stir in 1/2 cup of cheese. Season with salt and pepper.
  • In a 6 cup-capacity ovenproof dish, spread half of the sauce. Layer cauliflower on top. Pour over the rest of the sauce. In a bowl, mix breadcrumbs with the remaining cheese. Sprinkle breadcrumb mixture over cauliflower. Bake for 20 minutes until golden. Serve and enjoy!
