Cozy up with a simple and delicious Bacon Cheddar Potato Soup - perfect for cold weather. Cheesy, bacon-infused comfort in every bite, ready in minutes for a heartwarming meal any time of the day.
Ingredients:
  • 2 2/3 cups water
  • 1/4 cup butter
  • 1 teaspoon salt
  • 2 cups Betty Crocker™ mashed potatoes
  • 1/2 lb bacon, cut into small pieces
  • 1/2 medium yellow onion, finely chopped
  • 1/4 teaspoon black pepper
  • 1 carton (32 oz) Progresso™ chicken broth
  • 1/2 cup shredded cheddar cheese (2 oz)
  • Chopped green onion, if desired
Instructions:
  • First, in a 2-quart saucepan, bring water, butter, and salt to a boil over medium-high heat. Take the pan off the heat and quickly mix in the milk and dry potatoes until just moistened. Allow it to sit for about 30 seconds until the liquid is fully absorbed, then fluff it up with a fork. Your mashed potatoes are now ready to be enjoyed!
  • 1. In a large heavy stockpot, crisp up the bacon over medium heat. Once done, move bacon to paper towels with a slotted spoon, keeping the flavorful drippings in the pot. 2. Introduce the onion and pepper to the pot and sauté for 4 to 5 minutes until the onions are translucent and slightly golden. 3. Add the potatoes and broth to the pot, whisking well to combine everything. 4. Keep cooking until the dish is heated through and ready to enjoy.
  • Ladle the soup into bowls and sprinkle with crispy bacon, grated cheese, and fresh green onion for a delicious finish.
