Indulge in a creamy cauliflower chowder with sharp Cheddar and crispy bacon for a flavor-packed twist on classic potato soup.
Ingredients:
  • 8 strips bacon
  • 1 stalk celery, finely chopped
  • 2 tablespoons minced fresh garlic
  • 5 cups finely chopped cauliflower
  • 1 teaspoon onion powder
  • 2 cups milk
  • 2 cups chicken broth, divided
  • 3 dashes hot sauce, or to taste
  • 2 tablespoons flour
  • 2 cups shredded sharp Cheddar cheese
Instructions:
  • In a large skillet over medium heat, cook the bacon until crispy, turning occasionally, for 10 to 12 minutes. Remove the bacon with a slotted spoon to a paper towel-lined plate, keeping the bacon grease in the skillet. Let the bacon cool before crumbling it.
  • Sauté celery and garlic in the savory bacon grease until celery is tender. Then, add cauliflower, water, and onion powder, cover the skillet to steam the cauliflower until tender, stirring occasionally.
  • Combine milk, 1 3/4 cups chicken broth, and hot sauce in a pot and bring to a boil.
  • In a small bowl, combine flour with the rest of the chicken broth and pour it into the boiling chowder. Mix in Cheddar cheese and half of the crumbled bacon. Stir until the cheese is melted and the mixture is smooth.
  • Season the dish with a perfect balance of salt, pepper, and a kick of hot sauce. Serve the flavorful creation in bowls and generously sprinkle the remaining crispy bacon on top.
