Loaded Bacon-Cheeseburger-Potato Soup

Indulgent loaded potato soup with bacon, ground beef, Cheddar cheese, and veggies - a hearty and satisfying dish.
Ingredients:
  • 1 pound ground beef
  • 4 bacon
  • 2 medium carrots, peeled and diced
  • 2 medium celery, diced
  • 1 small onion, diced
  • 4 cups chicken broth
  • 2 large russet potatoes, peeled and diced
  • 3 tablespoons butter
  • 0.25 cup all-purpose flour
  • 1.5 cups milk
  • 2 cups shredded Cheddar cheese, plus more for garnish
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • salt and freshly ground black pepper to taste
Instructions:
  • In a hot skillet over medium-high heat, brown and crumble the ground beef for 5 to 7 minutes. Drain off the grease and set aside.
  • Cook bacon in a 3-quart saucepan over medium-high heat until evenly browned, about 10 minutes. Remove bacon with a slotted spoon and drain on paper towels, leaving bacon grease in the saucepan.
  • In a sizzling skillet of bacon-infused goodness, cook the carrots, celery, and onion until they're perfectly tender, around 10 minutes. Then, toss in the broth, potatoes, and browned ground beef. Let it all mingle and come to a gentle boil. Lower the heat, cover up, and let the flavors dance until the potatoes are soft, about 10 to 12 minutes.
  • Clean the skillet used for the beef. Melt butter in the skillet and whisk in flour until bubbly, about 3 to 5 minutes. Gradually whisk in the milk until smooth and well combined.
  • Whisk the milk mixture into the soup and bring to a boil, then simmer for approximately 2 minutes. Stir in Cheddar cheese until melted, then season with basil, parsley, salt, and pepper.
  • Take the pot off the heat. Serve the soup into bowls and garnish with crispy bacon and extra shredded Cheddar cheese.
