Indulge in delicious bacon, cheese, and basil waffles drizzled with homemade tomato jam.
Ingredients:
  • 6 medium plum (Roma) tomatoes, seeded and chopped
  • 1/4 cup granulated sugar
  • 2 tablespoons white wine vinegar
  • 2 tablespoons butter
  • 1 to 2 teaspoons Frank's™ RedHot™ Original cayenne pepper sauce
  • 1/2 teaspoon salt
  • 2 cups Original Bisquick™ mix
  • 1 1/3 cups milk
  • 1 egg
  • 2 tablespoons olive oil
  • 4 slices bacon, crisply cooked and crumbled
  • 1/2 cup shredded Cheddar cheese (2 oz)
  • 1/3 cup chopped fresh basil leaves
  • Fried egg, if desired
  • Additional fresh basil leaves, if desired
Instructions:
  • Heat the Tomato Jam ingredients in a 12-inch skillet over medium-high heat until boiling. Reduce the heat and simmer uncovered for about 30 minutes, stirring occasionally, until the mixture thickens. Keep warm.
  • Preheat waffle maker. Combine Bisquick mix, milk, egg, and olive oil in a large bowl, stirring until well blended. Gently fold in crispy bacon, savory cheese, and fragrant chopped basil.
  • Gently pour half a cup of batter onto the hot waffle maker, then close the lid. Allow it to cook for 3 to 4 minutes until nice and crispy. Repeat with the rest of the batter. Serve each waffle with tomato jam, a fried egg, and a sprinkle of fresh basil for garnish.
