"Indulge in a flavorful bacon, mushroom, onion, and Swiss cheese twist on classic meatloaf."
Ingredients:
  • 12 ounces chopped raw bacon
  • 1 small white onion, chopped
  • 5 button mushrooms, chopped
  • 1.5 pounds extra-lean ground beef
  • 1 egg
  • 0.25 cup evaporated milk
  • 6 ounces shredded Swiss cheese, divided
  • 0.5 cup corn flake crumbs
Instructions:
  • Preheat your oven to 350°F (175°C) for a perfectly cooked dish.
  • Cook bacon in a skillet until crispy. Transfer to paper towels using a slotted spoon. Leave 1 tablespoon of bacon grease in the skillet. Add onions and mushrooms, sauté until tender. Remove from heat.
  • Combine beef, egg, and milk in a large bowl. Add in the onions, mushrooms, 4 ounces of Swiss cheese, and almost all the bacon. Mix in cornflake crumbs until fully incorporated. Shape mixture into a loaf and transfer to a meatloaf pan.
  • Place in a preheated oven for 1 hour. Remove excess fat, then top with the remaining cheese and bacon. Put back in the oven and bake until the cheese is melted, approximately 5 minutes.
