Bacon Okonomiyaki

Add crispy bacon to your okonomiyaki for a mouthwatering fusion of savory Japanese pancake with cabbage, eggs, and soba noodles.
Ingredients:
  • 4 eggs
  • 0.5 cup water
  • 0.5 cup all-purpose flour
  • 2 teaspoons soy sauce
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3 tablespoons vegetable oil
  • 1 onion, diced
  • 2 cups shredded cabbage
  • 1 (8 ounce) package dried soba noodles
  • 1 (8 ounce) package bacon, chopped
Instructions:
  • Combine eggs, water, flour, soy sauce, baking powder, and salt until a smooth batter forms.
  • In a pan over medium heat, sauté onion in oil until soft and translucent, about 5 minutes. Add to the batter. Then, stir-fry cabbage in the same pan until slightly wilted, about 5 to 7 minutes. Add to the batter as well.
  • 1. Bring a large pot of water to a lively boil. Cook soba noodles in the bubbling water, stirring occasionally, until they are tender but slightly chewy, about 5 to 7 minutes. Drain and cut the noodles into shorter pieces, then mix them into the batter.
  • Preheat a flat frying pan over medium-high heat. Cook 1/4 cup of bacon until it begins to crisp, around 2 to 3 minutes. Form a small circle with the bacon in the center of the pan and pour 1 cup of batter over it. Cook until golden and crispy, flipping the pancake halfway through and pressing it down with a spatula, approximately 5 minutes on each side. Repeat the process with the rest of the bacon and pancake batter.
