Crispy potato pancakes with savory bacon and fragrant thyme for a delicious anytime snack.
Ingredients:
  • 4 slices bacon
  • 4 Idaho potatoes, peeled and shredded
  • 0.25 cup all-purpose flour
  • 4 garlic cloves, minced
  • 1 tablespoon chopped fresh thyme
  • salt and ground black pepper to taste
  • vegetable oil for frying, or as needed
Instructions:
  • Fry bacon in a skillet over medium heat until it turns crisp, which should take about 3 to 5 minutes. Place the cooked bacon on a paper towel-lined plate to remove excess oil and allow it to cool before crumbling it. Keep the flavorful bacon drippings in the skillet for later use.
  • Mix together crispy bacon, tender potatoes, savory flour, farm-fresh eggs, aromatic garlic, fragrant thyme, a pinch of salt, and a dash of black pepper in a spacious bowl.
  • Add a generous splash of vegetable oil along with the bacon drippings in a skillet. Warm over medium heat until the mixture shimmers.
  • Carefully spoon heaping tablespoonfuls of the potato mixture into the sizzling hot oil, gently pressing them down to form small 3-inch patties. Cook until beautifully golden on both sides, approximately 3 minutes per side.
