Indulge in a flavorful weekend breakfast feast with your favorite ingredients.
Ingredients:
  • 2 rashers rindless shortcut bacon, chopped
  • 200g desiree potatoes, peeled, grated
  • 2 x 125g cans corn kernels, drained, rinsed
  • 30.00 ml chopped fresh chives
  • Avocado, diced, to serve
  • Light sour cream, to serve
  • Chopped fresh chives, to serve
  • 99.00 gm self-raising flour
  • 128.75 gm milk
Instructions:
  • Preheat a frying pan over high heat, then sizzle the bacon until crisp, stirring occasionally for about 2 minutes. Place the cooked bacon on a plate.
  • Create the basic batter by sifting flour into a bowl and making a well in the center. In a separate jug, whisk together milk and eggs, then pour the mixture into the flour. Whisk until a smooth consistency is achieved.
  • Gently press out extra moisture from the potato using your hands. Then mix in the bacon, potato, corn, and chives into the batter.
  • - Heat oil in a pan over medium heat. - Spoon 1 heaped tablespoon of mixture per fritter into the pan. - Cook 4 fritters for 3 minutes on each side until golden and cooked through. - Repeat to make a total of 16 fritters. - Serve with avocado, sour cream, and chives.
