Delicious deep-fried corn fritters with bacon and sour cream for a burst of flavor.
Ingredients:
  • 0.25 cup sour cream
  • 1 (7 ounce) package Martha White® Sweet Yellow Cornbread & Muffin Mix
  • 1 cup fresh corn kernels, coarsely chopped
  • 8 slices cooked bacon, crumbled
  • 0.25 teaspoon ground red pepper (cayenne)
  • 1 cup Crisco® Pure Vegetable Oil, for frying
Instructions:
  • In a large bowl, whisk together eggs. Mix in sour cream, muffin mix, corn, bacon, and ground red pepper until just combined.
  • Heat 1-inch of oil in a deep fryer or skillet until it reaches 350 degrees F. Test by dropping a small amount of batter into the oil - it should sizzle. Carefully spoon batter into the hot oil by tablespoonfuls. Fry for 1-2 minutes until the bottom is golden brown, then flip and fry for another 1-2 minutes until golden brown all over. Transfer to paper towels to drain.
