Indulge in crispy sweet corn fritters, perfect for breakfast or as a delightful side dish with ham or ribs.
Ingredients:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3 ears fresh corn, kernels cut from cob
  • 2 eggs, separated
  • 0.5 cup heavy whipping cream
  • salt and freshly ground pepper to taste
  • 1 quart vegetable oil for frying, or as needed
  • 2 tablespoons cane syrup, or as desired
Instructions:
  • Combine flour and baking powder in a bowl, then mix in the corn kernels. In a separate small bowl, whisk egg yolks with cream and stir into the corn mixture. Season with salt and black pepper. In another bowl, use an electric mixer to beat egg whites until fluffy with stiff peaks. Gently fold the whipped egg whites into the batter, being careful to maintain volume.
  • Fill a deep heavy skillet with vegetable oil, leaving a depth of 3 inches. Heat the oil to 375 degrees F (190 degrees C).
  • Fry fritters in hot oil, using 2 to 3 tablespoons of batter for each, until they are golden brown on both sides, about 2 to 3 minutes per side. Place them on paper towels to drain and serve with a drizzle of cane syrup.
