Flavorful mini corn fritters packed with fresh herbs, served with zesty lime avocado.
Ingredients:
  • 21.00 gm fresh lime juice
  • 150g (1 cup) self-raising flour
  • 2.00 gm baking powder
  • 1-2 tsp lemon pepper seasoning
  • 1 egg
  • 250ml (1 cup) buttermilk
  • 1 corn cob, kernels removed
  • 1/2 bunch fresh chives, chopped
  • 62.50 ml chopped fresh coriander
  • Olive oil spray
  • 1 avocado, peeled, stone removed, coarsely chopped
  • 1 tsp finely grated lime rind
  • Fresh coriander leaves, to serve
Instructions:
  • Sift flour and baking powder into a bowl, then add seasoning. Create a well in the center of the mixture and whisk in egg and buttermilk until smooth. Gently fold in corn, chives, and coriander.
  • Preheat a non-stick frying pan over medium heat and lightly spray with oil. Spoon tablespoonfuls of fritter mixture into the pan, leaving space for them to spread. Cook for 2-3 minutes until bubbles form, then flip and cook for 1-2 more minutes until golden. Repeat with the rest of the mixture.
  • In a bowl, mix together avocado, lime juice, and lime zest. Sprinkle coriander leaves on top of the fritters and serve with lime and extra avocado on the side.
