Bacon- and Corn Bread-Stuffed Turkey Breast

Quick and easy holiday turkey: bacon-stuffed cornbread turkey breast. Guaranteed family favorite!
Ingredients:
  • 4 slices bacon, cut into 1/2-inch pieces
  • 1 cup chopped red and green bell peppers
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 cup frozen whole kernel corn
  • 4 cups corn bread stuffing mix
  • 1 teaspoon dried marjoram leaves
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups water
  • 3- to 4-pound frozen boneless whole turkey breast, thawed
Instructions:
  • In a large skillet, cook bacon over medium heat until browned, stirring occasionally. Add bell peppers, onion, and corn. Cook for 4 to 5 minutes until vegetables are tender. Stir in stuffing mix, marjoram, seasoned salt, pepper, and water until everything is moistened.
  • Keep the netting on the turkey breast. Cut the turkey breast lengthwise in half without cutting all the way through. Spread 1 cup stuffing on the turkey, then fold it over the filling. Use string to tie the turkey 3-4 times over the netting. Spray a 5- to 6-quart slow cooker with cooking spray and place the stuffed turkey breast in it. Spoon the rest of the stuffing mixture around the turkey.
  • Cook the turkey on low heat for 7 to 8 hours until the center is no longer pink. Transfer the cooked turkey to a serving platter, cover with foil, and let it rest at room temperature for 10 minutes before slicing. Remove the string and netting before serving.
