Crisp leaf lettuce is wilted in hot bacon fat and green onions, creating a classic Appalachian side dish known as 'killed' lettuce. Pair it with pinto beans and cornbread for a delicious meal.
Ingredients:
  • 4 slices bacon
  • 4 green onions, chopped
  • 1 head leaf lettuce - rinsed, dried and torn into bite-size pieces
Instructions:
  • Cook the bacon in a large skillet over medium-high heat, flipping occasionally, until crispy and evenly browned, for about 10 minutes. Transfer the cooked bacon to a paper towel-lined plate.
  • Sauté the green onions in the bacon grease for about a minute until they reach your desired tenderness. Pour this mixture over the lettuce, toss gently, add crumbled bacon, and serve promptly.
