Delicious bacon-wrapped meatloaf with beef and pork, glazed with sweet and zesty brown sugar for amazing flavor.
Ingredients:
  • 5 slices bacon
  • 1 stalk celery, diced
  • 1 cup fine bread crumbs
  • 1 cup milk
  • 1 teaspoon Worcestershire sauce
  • 0.5 teaspoon onion powder
  • 0.33333334326744 cup ketchup
  • 3 tablespoons brown sugar
  • 1 tablespoon dry mustard
  • 0.5 teaspoon Worcestershire sauce
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • Fry bacon in a large skillet over medium-high heat, turning occasionally, until crispy and golden brown, approximately 10 minutes. Drain on paper towels.
  • In a skillet, heat the remaining bacon grease over medium-high heat. Saute the celery in the hot grease until softened, about 5 minutes. Let it cool down.
  • In a large bowl, mix together bread crumbs, milk, eggs, 1 teaspoon Worcestershire sauce, black pepper, onion powder, and sauteed celery until well combined.
  • Combine the beef and pork with the egg mixture by hand, being careful not to overmix. Shape the mixture into a loaf and place it in the loaf pan. Arrange the bacon slices lengthwise on top of the loaf.
  • Place in the oven on the middle rack for 30 minutes.
  • Combine ketchup, brown sugar, dry mustard, and Worcestershire in a small bowl to create a flavorful glaze; mix until well combined.
  • Take the loaf out of the oven and skim off excess fat around the edges and on top. Put it back in the oven and bake for an additional 25 minutes. Take it out again, skim off any more fat, and evenly brush the glaze on top. Increase the oven temperature to 400 degrees F (200 degrees C).
  • Place the loaf back in the oven and bake for an additional 20 minutes until the center is no longer pink. Use an instant-read thermometer to ensure it reaches at least 160°F (70°C). Allow it to rest for 10 minutes before slicing and serving.
