Bacon-wrapped BBQ meatloaf elevates the classic dish with rich, smoky flavors.
Ingredients:
  • 5 slices bacon
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped, or more to taste
  • 1 pound lean ground beef
  • 0.5 cup barbeque sauce
  • 0.5 cup soft bread crumbs
  • 2 eggs, beaten
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 0.5 teaspoon chili powder
  • 3 tablespoons barbeque sauce
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease a 9x11-inch baking dish.
  • Cook the bacon in a large skillet over medium-high heat until edges start to curl, about 1 to 2 minutes per side. Drain the bacon slices on paper towels, leaving about 1 tablespoon of bacon drippings in the skillet.
  • Sauté onion and garlic in the flavorful bacon drippings until onion is tender, about 6 to 7 minutes. Remove from heat and let cool.
  • Combine the cooled onion and garlic with ground beef, 1/2 cup barbeque sauce, bread crumbs, eggs, Worcestershire sauce, Dijon mustard, oregano, and chili powder in a large bowl. Mix everything together by hand until well combined. Shape the beef mixture into a log-shaped meatloaf and transfer it to the baking dish.
  • Wrap semi-cooked bacon strips around the meatloaf, neatly tucking the edges underneath.
  • After 35 minutes in the preheated oven, apply a generous brush of 3 tablespoons of barbecue sauce on the bacon-wrapped meatloaf. Bake for an additional 10 minutes until fully cooked, reaching an internal temperature of 160°F (70°C). Rest for 10 minutes before serving.
