Bacon-wrapped roast potatoes

Irresistible bacon-wrapped potatoes, served with chive cream for the perfect combination of flavors.
Ingredients:
  • 6 rashers bacon
  • 1kg Kipfler potatoes, scrubbed
  • olive oil cooking spray
  • 300ml light sour cream
  • 46.80 gm wholegrain mustard
  • 40.00 ml finely chopped chives
Instructions:
  • Preheat your oven to 200°C. Line a baking tray with parchment paper. Remove the rind from the bacon, then cut it into 2cm-wide strips. Wrap the bacon around the center of each potato, slightly overlapping, and secure with toothpicks. Arrange the potatoes on the tray and lightly spray them with oil.
  • Roast until bacon is crispy and potatoes are tender, approximately 40 minutes.
  • Prepare a flavorful chive cream by combining all ingredients, including salt and pepper, in a bowl. Perfect for serving with potatoes.
