Try this Bahamian classic - pair with grits and Johnny cake, top with lime and hot pepper for a zesty kick. Simply delicious!
Ingredients:
  • 24 chicken wings, separated
  • 3 tablespoons lime juice
  • 1 teaspoon seasoned salt
  • 1 teaspoon vegetable oil
  • 1 large onion, diced
  • 0.5 green pepper, diced
  • 6 large potatoes, peeled and diced
  • 3 carrots, diced
  • 0.5 teaspoon crushed red pepper flakes
  • 1 tablespoon ground allspice
  • 2 bay leaves
  • 0.75 cup lime juice
  • 3 cups water
  • salt and black pepper to taste
Instructions:
  • Combine the chicken wings, 3 tablespoons of lime juice, and seasoned salt in a bowl, ensuring the wings are evenly coated. Let it marinate at room temperature for 1 hour.
  • In a large pot over medium heat, warm vegetable oil. Sauté onion and green pepper until the onion softens and browns slightly, about 10 minutes. Stir in potatoes, carrots, red pepper flakes, allspice, bay leaves, marinated chicken, lime juice, and water. Simmer covered on medium-low heat for about 40 minutes, until chicken is cooked through and veggies are tender. Season with salt and pepper before serving.
