Savory Bahamian side dish with bell pepper, onion, bacon, and versatile bean options.
Ingredients:
  • 1 slice bacon, chopped
  • 0.5 onion, chopped
  • 0.25 green bell pepper, chopped
  • 0.5 teaspoon chopped fresh thyme
  • 0.5 cup tomato sauce
  • 1 teaspoon browning sauce
  • 1 pinch red pepper flakes
  • 2 (14 ounce) cans whole kernel corn, drained
  • 3.5 cups water
  • 2 cups white rice
Instructions:
  • Start by warming up a large skillet over medium heat. Add bacon and cook until the fat starts to render. Then mix in onion, bell pepper, and thyme, and cook until the onion turns nearly translucent. Lower the heat to medium-low and incorporate tomato sauce, browning sauce, salt, black pepper, and red pepper flakes. Let it simmer for 3 minutes.
  • Add the corn and let it simmer for an additional 3 minutes. Gently pour in the water while stirring. Turn up the heat to high and mix in the rice, bringing it to a boil. Cover the pot, lower the heat to low, and simmer until all the liquid is absorbed, around 30 minutes.
  • Fluff the rice with a fork before serving.
