Cajun steaks with corn & rice salad

Prepare tasty Cajun steaks with corn and rice salad in just 30 minutes!
Ingredients:
  • 4 x 200g beef scotch fillet steaks
  • 10.00 gm Cajun seasoning
  • 1 lime, cut into 4 wedges
  • 450g pkt Family Size Microwavable Brown Rice
  • 2 celery sticks, trimmed, thinly sliced diagonally
  • 400g can sweet corn kernels, drained
  • 1 red capsicum, seeded, chopped
  • 125.00 ml flat-leaf parsley leaves
  • 1 small red onion, cut into thin wedges
  • 1 tsp lime rind, grated
  • Flat-leaf parsley leaves, to serve
Instructions:
  • Season the steaks generously with salt and pepper, then massage them with 1 tablespoon of oil. Heat a large frying pan over medium-high heat. Sear the steaks for 3 minutes on each side or until they reach your desired doneness. Place the steaks on a plate, cover with foil, and let them rest for 5 minutes before serving.
  • Char the lime wedges in the pan for 2 minutes on each side until they are beautifully charred. Take them off the heat.
  • While the rice cooks according to the package instructions, transfer it to a large bowl and let it cool for 5 minutes. Add the remaining oil, celery, corn, capsicum, parsley, onion, lime zest, and lime juice. Season with salt and pepper, then toss everything together.
  • Present the steaks alongside the rice salad, garnish with additional parsley, and accompany with grilled lime wedges.
