Spicy Korean pork with grilled corn and rice salad recipe

Versatile Korean-inspired marinade perfect for any meat or fish, ideal for hosting guests.
Ingredients:
  • 1 large (about 550g) pork fillet
  • Toasted sesame seeds, to serve
  • Sliced long fresh red chilli, to serve
  • 42.00 gm gluten-free soy sauce
  • 30.00 ml gochujang (find at some supermarkets and Asian grocers)
  • 16.00 gm brown sugar
  • 1 tsp sesame oil
  • 2 sweet corncobs, husk and silk removed
  • 6 green shallots, trimmed
  • 2 x 250g pkt microwave long grain white rice, cooked
  • 1 red capsicum, deseeded, finely chopped
  • 90g (1/3 cup) kimchi, coarsely chopped
  • 15.90 gm gluten-free soy sauce
  • 2 tsp sesame oil
  • 4.00 gm brown sugar
  • Kimchi, to serve
Instructions:
  • Mix together all the ingredients in a small bowl to create the marinade.
  • Place the pork in a glass or ceramic dish, pour over the marinade, and coat the pork. Let it marinate at room temperature for 1 hour.
  • Preheat a barbecue grill to medium-high. Take the pork out of the extra marinade and coat it lightly with olive oil. Grill the pork, turning occasionally, for about 14 minutes or until it reaches your preferred level of doneness. Place the pork on a plate and let it rest for 6 minutes. Cut the pork into thick slices.
  • Prepare the salad by lightly coating corn and shallot with olive oil. Grill the corn for about 6 minutes until charred and tender, remember to turn it occasionally. Grill the shallot for about 2 minutes until charred and tender, turning as needed. Using a sharp knife, cut the kernels off the corncobs and roughly chop the grilled shallot.
  • In a large bowl, mix together corn, shallot, rice, capsicum, and kimchi. In a small bowl, whisk soy sauce, sesame oil, and sugar. Pour the sauce over the rice mixture and toss until well combined. Transfer the salad to a serving platter.
  • Place the pork slices over the salad and generously pour over the reserved juices. Sprinkle with sesame seeds and chili for added flavor. Serve alongside an extra serving of kimchi for a delicious and vibrant dish.
