Elevate your rice game with fragrant Basmati rice, sweet corn, shallots, and mint for a refreshing twist.
Ingredients:
  • 2 tablespoons butter, divided
  • 1 cup Basmati rice
  • 2 cups water
  • 2 cups fresh corn kernels
  • 3 large shallots, sliced thinly
  • salt to taste
  • ground black pepper to taste
  • 2 tablespoons chopped fresh mint leaves
Instructions:
  • In a small saucepan over medium heat, melt 1 tablespoon of butter. Add the rice, pour in the water, and bring to a boil. Then cover, reduce heat, and simmer for 16 to 18 minutes until the rice is tender and the water is absorbed.
  • In a large skillet over medium heat, melt 1 tablespoon of butter. Add corn, shallots, sugar, salt, and pepper. Cook, stirring occasionally, until tender, about 4 to 6 minutes.
  • Combine the cooked rice, corn mixture, and fresh mint in a beautiful serving bowl.
