Indulge in gourmet creme brulees for special occasions.
Ingredients:
  • 300ml thin cream
  • 300ml thickened cream
  • 1 vanilla bean, split, seeds scraped
  • 1 egg, plus 3 egg yolks
  • 75g caster sugar, plus extra to sprinkle
  • 100ml Irish Cream
  • Chilled raspberries, to serve
Instructions:
  • Preheat the oven to 160°C for a perfect bake.
  • Combine both creams with the vanilla pod and seeds in a pan, then gently heat over low heat. In a bowl, whisk together egg, extra yolks, and sugar until light. Slowly pour in the warm cream and Baileys, whisking constantly. Divide the mixture into six 1-cup ramekins. Arrange them in a roasting pan and pour enough boiling water to reach halfway up the sides of the ramekins. Bake for 45 minutes or until just set. Allow to cool, then refrigerate for 2-3 hours before serving.
  • Before serving, generously coat the brulees with extra sugar and caramelize under a hot grill for 2-3 minutes, or use a blowtorch until the tops are golden and caramelized. Serve right away with fresh raspberries on the side.
