Elevate simple chocolate chip cookies with a splash of indulgent Baileys Irish cream for a delicious twist!
Ingredients:
  • 125g butter, at room temperature, chopped
  • 100g (1/2 cup, firmly packed) brown sugar
  • 70g (1/3 cup) caster sugar
  • 60ml (1/4 cup) Irish Cream liqueur
  • 1 egg
  • 200g (1 1/3 cups) plain flour
  • 2.50 gm bicarbonate of soda
  • 1.20 gm table salt
  • 290g pkt dark chocolate melts, coarsely chopped
Instructions:
  • Preheat your oven to 180C (160C fan forced) and prepare 3 large baking trays by lining them with baking paper.
  • In a small bowl, use electric beaters to whip together the butter, sugars, and liqueur until light and creamy. Mix in the egg until fully incorporated. Transfer the mixture to a large bowl. Sift in the flour, bicarbonate of soda, and salt. Gently mix until just combined. Fold in the chocolate. Chill in the fridge for 1 hour before proceeding.
  • Roll 1 1/2 tablespoonfuls of the mixture into balls using slightly damp hands. Space the balls 6cm apart on the prepared trays and gently flatten them with the heel of your hand.
  • Bake for 12-14 minutes until just golden. Let cool on trays for 5 minutes, then transfer to wire rack to cool completely. Serve.
