Baileys® Chocolate Chip Cookies

Indulgent Baileys® chocolate chip cookies with optional mint extract and green food coloring.
Ingredients:
  • 1.25 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.75 cup butter
  • 1.5 tablespoons Irish cream liqueur (such as Baileys®)
  • 0.5 cup packed brown sugar
  • 0.25 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla bean paste
  • 0.5 cup semisweet chocolate chips
  • cooking spray
Instructions:
  • Combine flour, baking soda, and salt in a bowl, then whisk until well blended.
  • In a small pan, gently melt the butter over low heat. Once melted, take it off the heat and mix in the Irish cream liqueur. Allow it to cool.
  • In a large bowl, mix together white and brown sugar. Pour in cooled butter and Irish cream liqueur. Beat with a hand mixer for about 1 minute. Add egg and mix well, then stir in vanilla paste.
  • Using the mixer on low speed, gradually incorporate the combined dry ingredients, adding about 1 cup at a time, until just combined. Gently fold in chocolate chips, then chill dough for 1 hour.
  • Preheat the oven to 350°F (175°C) and generously coat 2 baking sheets with cooking spray.
  • Scoop out golf-ball sized portions of the cookie dough using a 1 1/2 tablespoon scooper and place them on baking sheets, with space in between each portion.
  • Place in the oven until the bottom edges turn golden brown, about 9 to 10 minutes. Then, move to a wire rack to cool for 10 to 15 minutes.
