Elevate your chocolate fudge with a hint of Bailey's liqueur for a decadent twist.
Ingredients:
  • Melted butter, to grease
  • 1 x 395g can sweetened condensed milk
  • 100g butter, cubed
  • 255g (1 1/4 cups) brown sugar, firmly packed
  • 55.60 gm glucose syrup
  • 150g good-quality dark chocolate, finely chopped
  • 60ml (1/4 cup) Original Irish Cream liqueur
Instructions:
  • Grease a 20cm square cake pan with melted butter. Line the base and two opposite sides with non-stick baking paper, making sure to leave some overhang.
  • In a medium heavy-based saucepan, melt together condensed milk, butter, sugar, and glucose syrup over medium-low heat until sugar dissolves, about 3 minutes. Increase heat to medium-high and stir constantly for 10-15 minutes until the mixture thickens, becomes caramel in color, and pulls away from the sides of the pan. Remove from heat.
  • Combine the chocolate and liqueur, stirring until the mixture is smooth. Then, pour it into the prepared pan, smoothing the surface. Allow it to cool for 1 hour before refrigerating for another hour until firm. Cover with plastic wrap and chill.
  • Transfer the fudge from the pan by lifting it off with the paper. Cut the fudge into 16 equal portions using a sharp knife.
