Create a simple and luxurious Christmas fruit cake with just four ingredients, featuring the festive touch of Baileys for a delightful twist.
Ingredients:
  • 1kg (5 1/2 cups) mixed dried fruit
  • 500ml (2 cups) iced coffee flavoured milk
  • 125ml (1/2 cup) Irish Cream liqueur
  • 300g (2 cups) self-raising flour
Instructions:
  • In a large bowl, mix together the dried fruit, iced coffee-flavored milk, and Baileys. Stir well to combine, then cover and chill in the fridge overnight for optimal flavor infusion.
  • Take the fruit mixture out of the fridge and let it sit at room temperature for 30 minutes.
  • While the oven is heating up to 180C/160C fan forced, prepare a 20cm square cake pan by greasing it and lining the base and sides with baking paper.
  • Combine the flour with the fruit mixture, then pour into the prepared pan and smooth the top. Bake for 1 hour and 45 minutes or until a skewer inserted in the middle comes out clean. Let it cool in the pan for 30 minutes before transferring to a wire rack to cool completely.
