Versatile homemade Baileys custard - perfect on desserts or simply on its own!
Ingredients:
  • 500ml (2 cups) milk
  • 125ml (1/2 cup) Original Irish Cream liqueur
  • 100g (1/2 cup) caster sugar
  • 20.00 gm cornflour
  • 4.40 gm vanilla extract
Instructions:
  • In a saucepan, gently heat the milk and Baileys over medium heat until almost boiling. Take it off the heat and let it cool slightly.
  • In a large bowl, whisk together egg yolks, sugar, cornflour, and vanilla until thick. Slowly whisk in the warm milk mixture. Return the mixture to the pan and stir over medium heat for 4-5 minutes until it boils and thickens. Transfer to a bowl and let it cool, occasionally stirring. Cover with plastic wrap to prevent a skin from forming, then refrigerate until ready to use.
