Upgrade pavlova with Baileys custard for a decadent Aussie treat.
Ingredients:
  • 6 egg whites
  • 315g (1 1/2 cups) caster sugar
  • 7.50 gm cornflour
  • 8.80 gm vanilla extract
  • 1 tsp white vinegar
  • 250ml (1 cup) thickened cream
  • Shaved dark chocolate, to decorate
  • 500ml (2 cups) milk
  • 125ml (1/2 cup) Original Irish Cream liqueur
  • 4 egg yolks
  • 100g (1/2 cup) caster sugar
  • 20.00 gm cornflour
Instructions:
  • Preheat your oven to 120C/100C fan forced. Lightly grease a baking tray, then place a 22-24cm circle drawn on a sheet of baking paper, ink-side down, on the tray.
  • Whisk the egg whites using an electric mixer with a whisk attachment in a clean, dry bowl until they form firm peaks. Gradually add the sugar, one tablespoon at a time, while beating constantly until the mixture is thick, glossy, and the sugar has dissolved. Gently mix in the cornflour, vanilla, and vinegar until just combined.
  • Place the mixture onto the outlined circle on the tray and use a spatula to smooth it out. Bake for 1 1⁄2 hours until the meringue is crisp and dry. Turn off the oven and let the meringue cool completely inside with the door slightly open.
  • To prepare the Baileys custard, combine milk and Baileys in a saucepan, heat until just about to boil. Set aside. In a bowl, whisk egg yolks, sugar, cornflour, and vanilla until thick. Slowly whisk in the warm milk mixture. Return to the pan and cook until thickened. Let cool, stirring occasionally. Chill in the fridge, covered with plastic wrap to prevent a skin from forming.
  • Beat the cream in a bowl using electric beaters until it forms firm peaks. Mix in half of the Baileys custard until just combined.
  • Place the pavlova on a large serving plate. Spread Baileys custard cream on top and drizzle with some extra Baileys custard. Sprinkle grated chocolate on top and serve with the remaining custard on the side.
