Classic pavlova with whipped cream and fresh berries.
Ingredients:
  • 4 egg whites
  • 215.00 gm caster sugar
  • 2.50 gm cornflour
  • 4.40 gm vanilla essence
  • 300ml cream
  • 250g strawberries
  • 125g raspberries
  • 125g blueberries
Instructions:
  • 1. Preheat the oven to 120°C or 100°C fan and generously grease a large oven tray. For best results, use a round pizza tray. 2. Cut a sheet of baking paper to fit the tray and trace a 23cm circle using a plate as a guide. Then, draw a 13cm circle inside the larger one. 3. Place the baking paper on the tray, ensuring the pencil marks are face down.
  • Using an electric mixer, whip egg whites until soft peaks form. Gradually add sugar, one spoonful at a time, beating until dissolved between each addition until the mixture is thick and shiny. Stir in cornflour and vanilla until just combined.
  • Spoon meringue onto tray following the pencil lines to create a wreath. Use spoon to make an indentation in the center. Bake for 1½ hrs, then cool with oven door slightly ajar.
  • Carefully separate the pavlova from the paper using a large knife, then transfer it to a serving plate. Whip the cream until soft peaks form and spread over the pavlova. Finish by topping it with the berries.
