Indulge in a delectable pavlova roll filled with fresh berries and topped with luscious cream - a beloved family treat.
Ingredients:
  • 4 Free Range Egg whites
  • 220g caster sugar
  • 5.00 gm cornflour
  • 1 tsp white vinegar
  • 20.00 gm caster sugar, extra
  • 300ml thickened cream
  • 12.00 gm icing sugar mixture
  • 125g blueberries
  • 125g raspberries
  • 250g strawberries, quartered
  • 125g blackberries
Instructions:
  • Preheat the oven to 180C and prepare a 24cm x 30cm Swiss roll pan by greasing and lining it with baking paper, leaving some overhang on the sides.
  • Whip egg whites with an electric mixer until stiff peaks form. Gradually add sugar, one tablespoon at a time, while whisking until mixture is thick and glossy. Gently fold in cornflour and vinegar using a metal spoon. Spread mixture in pan and bake until meringue starts to brown, about 10 minutes.
  • Whisk cream and icing sugar with an electric mixer until stiff peaks form. Set aside half of the cream mixture. Gently fold half of the berries into the remaining cream mixture. Spread the berry cream over the pavlova. Roll the pavlova from a short end to enclose the filling. Wrap with baking paper and refrigerate on a baking tray for 1 hour.
  • Gently unwrap the pavlova, then generously spread the reserved cream mixture on top, and artfully adorn with the remaining berries.
