Anna Pavlova inspired dessert - airy meringue topped with cream and berries, perfect for gluten-free indulgence.
Ingredients:
  • 4 egg whites
  • 1 teaspoon cornstarch
  • 0.5 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 cup whipped cream, or more to taste
  • 0.75 cup sliced fresh berries, or more to taste
Instructions:
  • Preheat the oven to 275°F (135°C) and prepare a baking sheet lined with parchment paper.
  • In a glass, metal, or ceramic bowl, beat egg whites with an electric mixer on medium speed until soft peaks form, approximately 3 minutes. Gradually incorporate sugar, cornstarch, and cream of tartar, then beat on high speed until stiff, glossy peaks form, 3 to 5 minutes. Mix in vanilla extract and salt until combined, around 30 seconds.
  • Using a spring-hinged scoop, dollop the meringue onto the baking sheet and shape into 3-inch rounds. Press the back of a spoon into the center to create an indentation in each meringue.
  • Bake in the preheated oven until the meringue is dry to the touch, approximately 1 hour and 15 minutes. Transfer the parchment with the meringues to a wire rack to cool. Once meringues are cool, remove from parchment and let cool completely on the rack for about 1 hour.
  • Before presenting, generously crown each meringue with a dollop of whipped cream and decorate with ripe, juicy berries.
