Delicious pavlova with crispy exterior, fluffy center, topped with whipped cream and fresh fruit for a stunning dessert.
Ingredients:
  • 4 large egg whites
  • 1.25 cups white sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon lemon juice
  • 1 pint heavy cream
  • 6 kiwi, peeled and sliced
Instructions:
  • Preheat the oven to 300°F (150°C) for the perfect cooking temperature.
  • Place parchment paper on a baking sheet and trace a 9-inch circle.
  • In a glass, metal, or ceramic bowl, whip egg whites until stiff but still moist. Gradually add sugar, one tablespoon at a time, beating thoroughly after each addition. Whip until meringue is thick, white, and shiny.
  • Incorporate cornstarch, vanilla extract, and lemon juice with a gentle folding motion.
  • "Spread the mixture onto the parchment paper within the circle, gradually working it outwards to form a slightly raised edge while keeping the center slightly depressed."
  • Bake in the preheated oven for about 1 hour until the meringue is dry and sounds hollow when tapped. Then cool on a wire rack.
  • Whip heavy cream in a medium bowl until it forms stiff peaks; then, transfer the meringue from the parchment paper to a flat serving plate.
  • Spread a generous amount of whipped cream in the center of the meringue and garnish with fresh kiwi slices on top.
  • Enjoy by generously layering your dish with your favorite fresh fruit before digging in!
