Delicious, untested recipe from a community member.
Ingredients:
  • 7 egg whites, at room temperature
  • 15.00 gm cornflour
  • 2 tsp white vinegar
  • 20.00 ml plain flour, to dust tray
  • 1 large punnet strawberries, halved
  • 2 punnets raspberries
  • 2 large passionfruit
  • 500ml thickened cream, whipped
Instructions:
  • Preheat the oven to 200C. Line a baking tray with baking paper and draw a 22cm diameter circle on it, then lightly dust the marked circle with flour. Ensure the mixing bowl and beater are grease-free.
  • Beat egg whites until soft peaks form, then gradually add 6 tsp of sugar while continuing to beat until dissolved. Mix in vinegar and half of the remaining sugar, beat until mixture is stiff and glossy.
  • Fold the cornflour and remaining sugar into the mixture with care.
  • Spoon the mixture onto the circle on baking paper and create peaks on top using a butter knife.
  • Place tray in the center of the oven. Lower temperature to 125C and bake for 90 minutes. Then, switch off the oven.
  • Prop open the oven door with a wooden spoon and let the pavlova cool completely for about 3 hours. Once cooled, gently peel off the baking paper and transfer the pavlova to a serving platter.
  • Prior to serving, generously dollop whipped cream on top of the pavlova, artfully arrange an assortment of vibrant berries and fruits over the fluffy cream, and finish by elegantly drizzling the luscious passionfruit pulp over the entire masterpiece.
