Tropical fruit pavlova

Tropical fruit pavlova with whipped cream and honey, perfect for any BBQ or party. Swap tamarillos for kiwi fruit if needed.
Ingredients:
  • oil for greasing
  • 6 large free-range egg whites
  • 300 g caster sugar
  • 1 teaspoon white wine vinegar
  • 300 ml double cream
  • ½ a pineapple
  • 2 bananas
  • 2 tamarillos
  • 8 passion fruit
  • runny honey to serve
Instructions:
  • 1. Preheat the oven to 150°C/300°F/gas 2. Grease and line a 24cm baking tray. 2. Using an electric mixer, whip egg whites with a pinch of sea salt until soft peaks form. Gradually add sugar, one tablespoon at a time, until the mixture is glossy and firm peaks form. 3. Fold vinegar into the meringue mix and spoon onto the tray, creating a slight well in the center with a spoon. 4. Bake for 1 hour until the meringue is crisp. 5. Turn off the oven and let the meringue cool inside. 6. Whip double cream by hand until soft peaks form. 7. Peel and slice pineapple and bananas, peel and quarter tamarillos. 8. Spread whipped cream over the cooled meringue, top with cut fruit, and passion fruit pulp. 9. Drizzle honey over the pavlova and serve. Enjoy!
