Create a delicious Italian dessert with this simple recipe.
Ingredients:
  • 250ml (1 cup) strong espresso coffee, cooled to room temperature
  • 80ml (1/3 cup) coffee-flavoured liqueur
  • 6 savoiardi (sponge finger biscuits), halved crossways
  • 2 eggs, separated
  • 55g (1/4 cup, firmly packed) brown sugar
  • 1 x 250g container mascarpone, at room temperature
  • 125ml (1/2 cup) Original Irish Cream liqueur
  • Coarsely grated dark chocolate, to serve
Instructions:
  • Mix the coffee and liqueur together in a bowl. Dip each biscuit into the mixture one by one, then use them to line the sides of four 375ml (1 1/2-cup capacity) serving glasses. Finally, drizzle the remaining coffee mixture over the top.
  • In a medium bowl, use an electric beater to whip up the egg yolks and sugar until they become thick and creamy. Add in the mascarpone and Baileys and continue beating until everything is well mixed.
  • Whip egg whites into soft peaks using an electric beater. Gently fold half of the egg whites into the mascarpone mixture using a metal spoon, then fold in the remaining egg whites until well combined. Divide the mascarpone mixture into glasses, cover with plastic wrap, and refrigerate for 6 hours to chill.
  • Garnish with a generous sprinkling of chocolate before serving.
