Baked apple cider donuts with rich fall flavors - no frying needed!
Ingredients:
  • 2 cups fresh apple cider
  • 0.75 teaspoon baking powder
  • 0.75 teaspoon baking soda
  • 1 pinch ground cardamom
  • 1 pinch freshly grated nutmeg
  • 0.5 cup warm milk
  • 6 tablespoons unsalted butter, melted, divided
  • 0.75 teaspoon vanilla extract
  • 1 cup white sugar, or as needed
  • 1 tablespoon ground cinnamon, or as needed
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously butter two 6-cup donut pans.
  • In a saucepan over medium heat, simmer apple cider until it reduces to 1/2 cup, taking care not to let it reduce too much. If needed, adjust the amount with water to reach 1/2 cup. Set aside for later use.
  • In a large bowl, combine flour, baking powder, baking soda, salt, 1 teaspoon cinnamon, cardamom, and nutmeg. Whisk together until well mixed. Set aside for later use.
  • Combine 1/2 cup white sugar, brown sugar, milk, 2 tablespoons melted butter, vanilla extract, and egg in a bowl and whisk until well combined. Stir in the apple cider reduction and dry ingredients until a slightly thick batter forms, being careful not to overmix.
  • Fill the prepared donut pans with the batter using a spoon or a piping bag, leaving about 1/4 of space at the top.
  • Bake in the preheated oven until the tops are lightly browned and the donuts spring back slightly when touched, for about 10 to 12 minutes. Cool in the pans for 10 minutes before transferring to a sheet pan lined with a silicone baking mat. Cut out any donut holes as needed.
  • Brush the warm donuts lightly with the remaining melted butter for added decadence.
  • Combine 1 cup of white sugar with 1 tablespoon of cinnamon in a shallow dish. Toss the donuts in the mixture until coated. Allow the donuts to cool completely before serving.
