Chef John's exquisite apple rose pastries feature apple slices artfully arranged on flaky puff pastry for a delectable fruit treat.
Ingredients:
  • 1 large red apple, cored and very thinly sliced
  • 0.25 cup white sugar
  • 1 sheet frozen puff pastry, thawed
  • 0.25 cup melted butter
  • 2 teaspoons water
  • 1 teaspoon confectioners' sugar
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and place an oven rack in the middle position. Butter two (6 to 8-ounce) ramekins and dust them with white sugar for a delightful touch.
  • Arrange apple slices on a microwave-safe plate, slightly overlapping if needed. Microwave on high for about 45 seconds until slices are slightly softened. Cover the plate with plastic wrap and a kitchen towel.
  • Combine the sugar and cinnamon in a small bowl, blending them together until well mixed.
  • Roll out the puff pastry sheet very thin. Use a pizza cutter to cut two rectangles measuring 3 by 12 inches each. Save the extra pieces for later.
  • Brush the dough with luscious melted butter and generously dust it with fragrant cinnamon sugar. Arrange apple slices along one side of the dough, slightly overlapping them and leaving a quarter-inch border. Gently fold the bottom half of the dough over the apples to create a beautiful, rounded "folder" with the apple slices peeking out.
  • In a small bowl, whisk the egg and water until combined. Brush the dough surface with the egg wash, then sprinkle with cinnamon sugar.
  • Roll the dough into rose shapes, sealing the ends with the dough strip and then transfer them to the ramekins. Sprinkle with cinnamon sugar.
  • Bake on the center oven rack until nicely browned, around 45 minutes. Carefully transfer the ramekins to a baking sheet to cool for 5-10 minutes. Gently remove the apple roses from the ramekins and let them finish cooling on a wire rack. Dust with confectioners' sugar just before serving.
