Indulge in the mouthwatering pairing of pork and apple for a delightful Monday night meal!
Ingredients:
  • 4 large pork chop
  • 3 unpeeled red apples, cut into wedges
  • 2 tsp rosemary leaves
  • Salt and cracked black pepper, to season
  • olive oil spray
Instructions:
  • Preheat the oven to 210°C. Score the fat around the edge of the chops at 3cm intervals using a sharp knife. Season the chops with salt and pepper, then spray them with oil spray for a flavorful and crispy finish.
  • Preheat large non-stick frying pan over high heat. Sear pork chops, two at a time, until golden brown on each side for 2-3 minutes. Remove from heat.
  • Mix apple slices with fragrant rosemary and a drizzle of oil. Layer them at the bottom of a spacious baking dish without using parchment paper. Arrange pork chops on top of the flavorful apples and bake for 10 minutes, or until the pork is fully cooked and the apples are soft and caramelized.
  • Garnish pork with a side of apple slices and steamed greens.
