Indulgent pasta casserole with mushrooms, asparagus, onion, and cherry tomatoes topped with crispy, cheesy breadcrumbs.
Ingredients:
  • 0.5 (16 ounce) package gemelli pasta
  • 2 tablespoons herb-infused extra-virgin olive oil
  • 0.5 medium onion, chopped
  • 1 pound fresh asparagus, cut into 1-inch pieces
  • 1 (8 ounce) package sliced mushrooms
  • 2 cups cherry tomatoes, halved
  • 0.25 teaspoon crushed red pepper flakes
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups 1% milk
  • 0.66666668653488 cup grated Parmigiano-Reggiano cheese, divided
  • 0.25 cup shredded provolone cheese
  • 0.33333334326744 cup Italian-seasoned bread crumbs
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 7x11-inch baking dish.
  • Boil a pot of salted water, then cook gemelli until al dente, about 6 minutes. Drain and set aside.
  • In a large skillet over medium heat, heat herb-infused olive oil until shimmering. Saute onion for 2 minutes. Add asparagus and mushrooms; cook until mushrooms start to soften and asparagus turns bright green, about 4 minutes. Stir in tomatoes, garlic, red pepper flakes, salt, and pepper. Cook for an additional 4 minutes, stirring occasionally.
  • Transfer the vegetable mixture to a large bowl and mix in the cooked pasta until well combined.
  • In the same skillet, melt butter over medium heat. Add flour and cook, stirring constantly, until mixture bubbles for about 4 minutes. Pour in milk, whisk vigorously to prevent lumps. Stir until sauce thickens and bubbles for another 4 minutes. Take off heat and stir in 1/3 cup Parmigiano-Reggiano and provolone until cheese is melted, and sauce is smooth.
  • Combine the sauce with the pasta-vegetable mixture, ensuring everything is well-coated. Taste and season as needed, then transfer to the baking dish. Mix 1/3 cup Parmigiano-Reggiano with bread crumbs in a small bowl and sprinkle over the casserole before baking.
  • Bake until golden brown and bubbly in the preheated oven for 20-25 minutes.
