Make delicious chicken and mushroom crepes with just 5 simple ingredients.
Ingredients:
  • Olive oil spray
  • 2 chicken breast fillets, thinly sliced
  • 200g button mushrooms, thinly sliced
  • 1 bunch asparagus, trimmed, cut diagonally into quarters
  • 400g pkt frozen crepes, thawed following packet directions
  • 100g coarsely grated cheddar
Instructions:
  • Preheat oven to 180°C. Coat a 20 x 30cm baking dish with oil. Heat a large non-stick frying pan over medium heat, then spray with oil. Season chicken with salt and pepper, then stir occasionally and cook for 2-3 minutes until cooked through. Transfer to a plate.
  • Prepare the pan with a light spray of oil. Sauté the mushrooms for 5 minutes, or until soft, stirring occasionally. Introduce the asparagus, cook for 1-2 minutes until tender-crisp, then add the chicken and mix well.
  • Spread the chicken mixture evenly over the crepes and sprinkle with half of the cheddar. Gently roll up the crepes to seal in the delicious filling. Arrange the crepes in the dish, slightly overlapping. Sprinkle the remaining cheddar on top and bake for 15-20 minutes until golden brown.
