Asparagus and mushroom pasta in a savory chicken broth, topped with Parmesan cheese for a delicious meal.
Ingredients:
  • 1.5 pounds fresh asparagus, trimmed and cut into 1 inch pieces
  • 0.25 cup chicken broth
  • 0.5 pound fresh mushrooms, sliced
  • 8 ounces angel hair pasta
  • 1 tablespoon olive oil
  • 0.5 teaspoon crushed red pepper
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Prepare pasta as per the package directions.
  • 1. In a nonstick skillet, heat olive oil. Saute asparagus over medium heat for 3 minutes. Then, add chicken broth and mushroom slices; cook for another 3 minutes.
  • After draining the pasta, delicately combine it with the asparagus mixture in a serving dish. Sprinkle with Parmesan cheese and crushed red pepper for an extra kick.
