Make a quick and flavorful veggie pasta with savory ham.
Ingredients:
  • 25g parmesan
  • Zest and juice of 1 lemon
  • 2 bunches green asparagus, trimmed
  • 175g podded green peas
  • 500g long dried pasta*
  • 50g butter
  • 1 leek, white part thinly sliced
  • 200g piece leg ham, torn into small strips
  • 20.00 ml Cognac or brandy (optional)
  • 125ml white wine
  • 1 bunch chervil, picked into sprigs
Instructions:
  • Trim the tips off the asparagus and set them aside. Cut the asparagus stalks into 1cm pieces. Put the asparagus tips and peas in a sieve, then lower the sieve into a large saucepan of boiling salted water. Boil for 3 minutes or until tender. Drain and cool the vegetables under cold running water.
  • Cook pasta in the boiling vegetable water until perfectly al dente.
  • Heat a luxurious blend of butter and oil in a pan over medium heat. Sauté leek and ham with a touch of salt for 3 minutes, then toss in asparagus stalks. Cook for an additional 5 minutes or until just tender. Pour in the Cognac and wine, simmering until reduced by half. Enjoy the mouthwatering aroma!
  • After cooking the pasta, save 1/2 cup of the cooking water. Put the pasta back in the pot along with the reserved water. Stir in the leek mixture, peas, asparagus tips, and remaining ingredients. Season with salt and pepper to your liking, mix everything well, and serve.
