Pasta with asparagus and sage butter

Ingredients:
  • 375g dried tagliatelle pasta
  • 125g butter, chopped
  • 82.50 ml fresh sage leaves
  • 2 bunches asparagus, sliced
  • pinch ground nutmeg
  • shaved parmesan cheese, to serve
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until tender. Drain and cover to retain warmth.
  • In a medium-high heated frying pan, melt butter until sizzling. Introduce sage leaves and cook for 2 minutes until they turn crispy. Remove sage onto a paper towel-lined plate. Add asparagus to the same pan and cook for 2 minutes until tender, stirring occasionally. Sprinkle in nutmeg, season with salt and pepper to taste.
  • Combine pasta and fresh sage with the asparagus, ensuring all ingredients are coated evenly. Garnish with a generous sprinkle of Parmesan before serving.
